- Lavaur: a town steeped in history, with St Alain's Cathedral, recently renovated by craftsmen, and the only Jacquemart in the South-West. Albi: a UNESCO World Heritage Site, with its impressive cathedral, the Palais de la Berbie, the Toulouse Lautrec Museum and its medieval-style streets and alleyways. Castres: the town of Jaurès, with its tanners' houses and drying sheds on the banks of the Tarn. Cordes: a medieval village perched on a puech, with breathtaking views and artists' and craftsmen's shops lining the narrow streets. Gaillac and its famous vineyards, of course, but also the Abbey of Saint-Michel and its Cavaillé-Coll organ. Toulouse: the city of the pastel trade, dominated by the proud towers of the Capitouls and criss-crossed by small streets that all lead to the quays of the Garonne, from where the Cocagne hulls left for the drapers of Northern Europe.
