The mere mention of Castelnaudary makes mouths water for many French people. They are well aware of the town's gastronomic reputation. You'll be spoilt for choice when it comes to satisfying your appetite in its various restaurants. But you'd be well advised to order the local cassoulet, which combines sausage, pork rind, shoulder or shank. This generous dish goes particularly well with a red Gaillac, Madiran or Côtes du Marmandais wine. Among the meat specialities likely to interest you is alicuit de canard, a tasty stew of prepared poultry offal. In the Aude and Lauragais regions, you can also enjoy a variety of charcuterie, including the Galabart blood sausage, recognisable by its black colour and diameter of around 5 centimetres. The Bougnette, an excellent minced pork belly prepared in a loaf of bread, will not leave you indifferent either. It can be eaten hot or cold, but it's also a favourite with the locals as an aperitif. Finally, to round off your meal with a delicious treat, there are several options: Croustade aux pommes, Curbelet, Pescajoune etc...
Get your afternoon off to the best possible start with a short digestive walk. It will be more than wise after a hearty lunch! One of them is called "Si Castelnaudary m'était contée". This 4-kilometre walk starts from the Place de République and takes in the ancient ramparts, the Collégiale Saint-Michel and Notre-Dame-De-Pitié. A much more demanding route is well worth the effort for experienced walkers. "In the footsteps of the Master of Cabestany" is a walk of just over 15 kilometres, taking holidaymakers past the Chapelle Notre Dame de Bassens and the Abbaye de Saint-Papoul. With young children, it's best to opt for more recreational activities, such as a visit to Ferme la Matarelle. Your little boy or girl will have the chance to get up close to lots of animals. The Aude is a very family-friendly destination, as evidenced by the various equestrian centres dotted around Castelnaudary. Set off with your hair in the wind to explore the fascinating landscapes of the Lauragais region, you won't regret the experience!
By choosing a bed and breakfast in Castelnaudary, you'll benefit from easy access to a number of iconic towns in the south-west. To the north-east, for example, lies the prefecture of the Tarn, Castres. Its main attractions are the Goya Museum, the Bishop's Garden and the Church of Notre Dame de la Plate. If you're a history buff, you should definitely make a stopover at Carcassonne. A walk along the ramparts is bound to be rewarding, as is a visit to the Eglise Saint-Vincent. Less than an hour's drive north-west of Castelnaudary is the Pink City, Toulouse, with its famous Place du Capitole, its Jacobins Church and its superb Saint-Sernin Basilica. Other buildings of interest to tourists include the Pont Neuf and the Chapelle des Carmelites.
