The best recipes for tasting Dom Tom specialities

In the West Indies, it's hard to escape accras, succulent fritters generally stuffed with cod. They go well with miniardises as an aperitif, but can also be enjoyed as a starter. Poultry lovers will be spoilt for choice during their holidays, with so many mouth-watering recipes on offer. These include delicious duck with mangoes and the famous poulet boucané! Beef is also cooked in a variety of ways, to the delight of young and old alike. You'll certainly see pork with pineapple, veal with orange and other combinations of meat and fruit on restaurant menus. The maritime regions of the French overseas departments and territories are an inexhaustible source of inspiration for gourmets. Stuffed lobsters, burgot kebabs or clam au gratin: seafood lovers will be delighted from day one to the last. But don't bite off more than you can chew - you could fill your appetite even before dessert, and you'll bitterly regret it! In fact, the sweets loved by Reunionese, Guyanese and Antilleans are exquisite. Sweet potato cakes and mango sorbets are a big hit, and there's no end in sight. To accompany your dishes, don't hesitate to try a beer from Lorraine and share a glass of rum at the end of the meal as a digestif.

Dom Tom: how to have fun there during the holidays?

The activities on offer to the public in the Dom Tom are diverse and varied. We have selected the three must-see pastimes that should fill you up. The first is diving. In Mayotte, this often takes place on the S-shaped channel. Here you can encounter turtles, barracudas, stingrays and many other fascinating species. If you're staying in Guadeloupe, explore the Petite Terre nature reserve or the îlet du gosier, you won't regret your choice! If you're one of those tourists whose main need is to relax, you'll be spoilt for choice in the French overseas departments and territories. There's one heavenly beach after another, especially in Guadeloupe. For example, you can lay your towel on the ochre-coloured sand of the vast sandy expanse of Grand Anse.

Other picture-postcard settings await you on Grand-Terre, where coconut palms and blonde sand dominate! Reunion Island is also ideal for lazy breaks: the beaches of Saline-les-Bains and l'Etang-Salé offer enchanting settings all year round. To immerse yourself in the lush vegetation, there's nothing better than a good hike in Guyane! We like the very accessible Montabo trail for families and recommend the Montagne des Singes for the more experienced.

Dom Tom towns not to be missed on holiday

Your bed and breakfast in the Dom Tom may be in Saint-Denis on Reunion Island. This town attracts the curiosity of French people and foreigners alike in more ways than one. You can spend your time in the Parc de la Trinité or discover the superb cathedral. Other destinations in the French overseas departments and territories are Pointe-à-Pitre, Fort-de-France and Cayenne.
