The oysters are bred or matured in the "claires", former shallow salt marshes where the water renews itself with the tides. Renowned the world over, the Marennes-Oléron oyster owes its reputation to its slightly nutty flavour and unique colour, due to a microscopic algae present in its body. The marsh shrimp is easily distinguished by its pink tiger coat, and is farmed by very few oyster farmers. They live with only 4 or 6 shrimp per square metre; for information, in other farms they more often live between 80 and 100 shrimp per square metre.
