If you're staying in Nîmes, a visit to Les Halles is a must: a festival of delights to be savoured without moderation! You won't want to miss the Picholine, the olive of Nîmes, an olive with abundant, firm and sweet flesh that can be crunched green.
As a starter, or as an aperitif, you'll succumb to tapenade (a paste of black or green olives mashed with anchovies) or anchoïade (anchovies mashed with olive oil and garlic) spread on toasted bread.
As a typical Nîmes dish, you can try brandade de Nîmes (cod brandade), or Gardianne de Taureau, bull marinated in red wine.
