The delights of Languedoc cuisine to sample on your holiday!

The gastronomy of Carcassonne is characterised by its richness, with many dishes concocted from poultry and vegetables. The most emblematic that you will have the opportunity to discover is cassoulet. The recipe from the medieval town is based on a white bean stew, combined with lamb or mutton and red partridge. This traditionally hearty meal should be followed by a good siesta or a digestive walk!

You can then enjoy a fougasse with fritons during your holiday. It has the advantage of being served at any time of day and is made from bread dough, mixed with pieces of bacon and pork.

The most discerning palates are particularly fond of Languedoc-style snails and dry liver. The latter refers to salted and dried pork, easily recognisable by its blackish-red colour. The Aude and Carcassonne are not to be outdone on the wine front. Restaurants offer a wide choice of genuine, fruity and balanced wines, including those from Charlemagne and Domaine Fontaine Grande.

The most beautiful structures in the medieval city of Carcassonne

. Tourism in Carcassonne is largely concentrated within the walled city. You absolutely must discover its impressive ramparts, 52 towers and numerous structures to grasp its history.

First of all, there are the Narbonnaise and Aude gates and the Château Comtal, built in the 12th century. Other monuments can then catch your eye in the heart of Carcassonne. These include the Basilica of Saint-Nazaire, a church combining Gothic and Romanesque styles. You'll also no doubt enjoy discovering the Théâtre de la Cité, once capable of seating up to 6,000 people.

The cultural offering in the Aude prefecture is of the highest quality. It includes, for example, the Musée des Beaux Arts, where paintings dating from the 16th to the 20th centuries are on display. To stretch your legs, there's nothing better than a good bike ride along the banks of the Canal du Midi, where you can take advantage of the favourable climate and see the city from a different angle.

The natural and historical heritage around Carcassonne

The influence of Catharism shaped the landscape of Carcassonne and the region in the Middle Ages. Among the monuments to visit around the medieval city, discover the most beautiful remains of the castles of Puivert, Arques or Lastours.

The ideal Carcassonne B&B for you is not far from the commune of Narbonne and its notable heritage. In particular, you go there to contemplate Fontfroide Abbey and admire the riches of Saint-Just-et-Saint-Pasteur Cathedral. In this unfinished Gothic edifice, you'll be fascinated by the altarpiece, the chapel of Notre-Dame-de-Bethléem and the great organ.

Accompanied by children, plan a day at the heart of the Sigean African reserve, home to almost 4,000 animals including 900 mammals from the four corners of the globe.
