Authentic, fragrant, sometimes refined and very often generous cuisine. That's the best way to define the gastronomy of Corbières and the Aude countryside. Fine gourmets will delight in fried or grilled hake, for example, or prefer a fine-fleshed sea bream. The region's culinary ambassador is undoubtedly cassoulet. Its composition varies from town to town, but you'll enjoy its flavours wherever you eat it. If you've already discovered this delicacy on a previous trip, try a poultry speciality that is emblematic of the South of France, duck alicuit. You'll also have the chance to try the aillade toulousaine, a sauce that generally accompanies veal chops on the plates of the people of Aude. The gastronomy of the Corbières also promises some wonderful discoveries for dessert. The pescajoune, a very popular dish in the Lauragais region, is a great way to round off a delicious meal. The albigeoise shuttle can round off your lunch or fill a little hunger on the way home from an afternoon activity. It is a shortbread cake filled with candied fruit and almonds.
The Aude countryside is teeming with grandiose natural sites. Some of them are very close to the commune of Corbières. These include the Lac de Montbel. Bordered by beautiful forests, this reservoir is fed by the waters of the Hers-Vif. Families from the region come to enjoy its beaches, especially in summer, while teenagers love to explore its 570 hectares by pedalo or canoe! A few dozen minutes' drive north of Luzenac (Luzenac), hikers gather to climb the Pic de Saint-Barthélemy. It's a demanding route, but not inaccessible to the general public: it takes just over 3 hours of effort from the Mont d'Olmes car park to reach the summit. You'll then be able to enjoy a breathtaking 360-degree panoramic view over the valleys. Camon, one of France's most beautiful villages, is not far away. We invite you to visit this village with its rich historical heritage. Its church, winegrowers' huts, upper house, former priory and ramparts will catch your eye as you stroll around. As a family, it's great to spend some time at the Musée des Automates de Limoux. It allows you to immerse yourself in a fairytale world, an entertaining experience whatever your age.
You'd be wrong to explore just Corbières and its surrounding communes, the south-west of France shines throughout the World thanks to its flamboyant historical monuments. Your bed and breakfast in Corbières, for example, is less than an hour's drive from Carcassonne. The fortified city is one of the most striking testimonies to our medieval era, and is in fact a UNESCO World Heritage Site. You're sure to snap a photo of the Porte Narbonnaise, the Château Comtal and the interior decorations of the Basilica of Saint-Nazaire.
